Making A Simple Difference

#1. Empty The Fridge Soup, Basic Recipe 

Cleaning out the fridge?

 

Rather than throwing out those wilted, last couple of carrots, few potatoes and onions, why not make a nice pot of soup.

 

You can use many different vegetables, except strong types such as turnips.

 

-Cut up the equivalent of about five potatoes, a few carrots and one or two onions;

-Melt one or two tablespoons of butter or margarine in a large pot;

-add vegetables and sauté until onions are slightly translucent;

-add about five or six cups of water and five or six bouillon cubes or envelopes of

 whatever flavour you like, chicken is good and we especially love the vegetable flavours;

-add some spices such as a bit of garlic, thyme, rosemary or whatever else you like and a couple of bay leaves.

-Cook and simmer until the vegetables are tender-about thirty minutes.

 

When done, remove the bay leaves and use a hand mixer to mash down the soup. You can also use a blender, or any other kitchen tool such as a potato masher. You can puree the soup to whatever consistency you prefer.

 

-add about one cup of milk to the finished soup for a nice milky texture and you have a lovely, nourishing meal.

 

This can be frozen in individual servings if you like.

 

Flavour suggestions: broccoli, broccoli and cauliflower, carrot, carrot and onion, potato, potato and onion, potato and carrot, zucchini and onion, zucchini and broccoli, sweet potato, etc, just use your imagination and you will love the results.

#2. Easiest Chicken Noodle Soup, Basic Recipe 

This is the most basic recipe that you will find. Once you have mastered it you can add your own choices and spice it up to your liking.

 

You will need

 

Approximately 1 pound of cooked chicken – white breast is nice, without the skin

 

8 cups of water

 

10 Oxo Chicken Bouillon Sachets (make sure it’s the 25% less salt type)

 

2 cups of thin egg noodles or any other pasta that you may like

 

How it’s Done

 

Put water into a large pot, and add skinned chicken, chicken bouillon. Boil until chicken is fully cooked.

 

Remove chicken from the pot and cut up into small pieces and put back in the pot.

 

Add the noodles and cook until tender.

The above is my very basic recipe that you can start off with.

 

Now you can think of other ways to soup it up such as:

 

-At the beginning add a finely chopped onion, carrot, celery (I don’t like celery in soup), -Experiment with different types of broth until you find your own favourite,

-And of course some spice-pepper for a start and anything else you might like such as parsley.

-Keep away from the salt until you try the soup as the broth can be quite salty.

 

Tip: If you like a bit more substance and less watery soup, add some instant mashed potatoes at the end of the cooking time. Try ½ cup at a time and stir it in well. Adding the potatoes is good for people who are ill need more nourishment.
